Green Eggs

A great high protein low carbohydrate breakfast choice

Green Eggs

Makes 1 serving
Calories 129 per serving

Carbohydrate 1g
Dietary Fibre 2.1g
Protein 14.8g

Ingredients
– 1 whole egg
– 6 tablespoons of Two Chicks egg white
– 2 blocks of Frozen Spinach
– Pinch of Himalayan Salt
– Freshly Ground Black Pepper

1. Place the Frozen Spinach in a pan on low heat and cover until the spinach has thawed
2. Once thawed add the Whole Egg and Egg Whites to the spinach mixing thoroughly
3. Continue to mix until the eggs are cooked
4. Add Salt and Pepper to taste and serve immediately
5. You could serve with a toasted slice of Biona Quinoa and Amarynth rye bread to keep you fuller for longer or even make an omelette for breakfast on the go!
