Sweet Potato Muffins

Christmas is coming – why fall prey to the truck loads of cheeky treats that will be in your midst and lurking behind every dark corner.  Bake yourself up a batch of these awesome sweet potato muffins adapted from a recipe found on The Big Mans World and sail through this evil season of monumental weight gain!

Ingredients

  • 1 tsp                      Ground nutmeg
  • 1 tsp                      Cinnamon
  • Pinch                    Sea Salt
  • 1 tsp                      Vanilla Extract
  • 1/2 cup                 Mashed Sweet Potato
  • 1                             Organic Egg
  • 1/2 cup                 Pure Maple Syrup
  • 1 tsp                      Baking Powder
  • 2 cups                   Oats (ground)
  • 240ml                   Koko coconut milk or non dairy milk of choice
  • 100g                      Smooth Almond Butter
  1. Preheat over at 180 degrees
  2. Line a muffin tin with cases and set aside
  3. Peel and chop a medium sweet potato.
  4. Boil over a medium heat until soft
  5. Mash the potato and set aside for later
  6. Blend the oats until the consistency of flour
  7. Add oat flour to a mixing bowl with Nutmeg, Cinnamon, Sea Salt and Baking powder
  8. In a separate bowl mix together the remaining ingredients exc the sweet potato
  9. Mix all the ingredients together until they form a batter
  10. Using a 1/4 measuring cup divide the mixture into the cases.  Be sure to level of each cup otherwise there will not be enough batter for each cup
  11. Place into the oven and bake for 20 mins or until a toothpick comes out clean
  12. Allow to cool before diving in
