Bake yourself up a batch of these awesome sweet potato muffins adapted from a recipe found on The Big Mans World and sail through this evil season of monumental weight gain!

Ingredients
- 1 tsp Ground nutmeg
- 1 tsp Cinnamon
- Pinch Sea Salt
- 1 tsp Vanilla Extract
- 1/2 cup Mashed Sweet Potato
- 1 Organic Egg
- 1/2 cup Pure Maple Syrup
- 1 tsp Baking Powder
- 2 cups Oats (ground)
- 240ml Koko coconut milk or non dairy milk of choice
- 100g Smooth Almond Butter
- Preheat over at 180 degrees
- Line a muffin tin with cases and set aside
- Peel and chop a medium sweet potato.
- Boil over a medium heat until soft
- Mash the potato and set aside for later
- Blend the oats until the consistency of flour
- Add oat flour to a mixing bowl with Nutmeg, Cinnamon, Sea Salt and Baking powder
- In a separate bowl mix together the remaining ingredients exc the sweet potato
- Mix all the ingredients together until they form a batter
- Using a 1/4 measuring cup divide the mixture into the cases. Be sure to level of each cup otherwise there will not be enough batter for each cup
- Place into the oven and bake for 20 mins or until a toothpick comes out clean
- Allow to cool before diving in
